Too Many Eggs
Last weekend I came home from the CSA very pleased to have organic eggs. Then I discovered that DH had already purchased a dozen organic eggs.
I decided my eggs are better, because I know exactly where they came from. Then we only cooked one or two of them over the week.
Saturday, in my CSA share… six more eggs. Now we have about 20 eggs, which is way too many.
And stale baguettes. And raisins and tart apples. That sounds like bread pudding to me. So thats what I made, bread pudding with organic eggs and organic apples.
The apples are not in the recipe. I just like them.


We have hens; I have egg recipes.
So MANY egg recipes. Unfortunately, cheesecake and pound cake use up eggs quite nicely…
I think that’s somehow related to how the drier has shrunk all my favourite dresses.
I can’t wait to get chickens. On a good week we can eat 18 eggs easily. They are Alex’s favorite breakfast food, and we use them in pancake mix and I love hard-boiled eggs/egg salad.
One of my online groups has been posting about methods of egg storage. Since eggs from the supermarket have been stored for months already, fresh eggs keep for a very long time! You can extend that time through some bizarre storage methods, but I know people who have a steady year-round supply of eggs because they keep for so long.
Also, apparently you shouldn’t wash fresh eggs until just before you cook them. (I didn’t know this, you may have already.)
I’m skeptical of bread pudding. At my favorite restaurant, Sonny’s, we call it meatbread because it looks like they just threw all the leftover meat scraps into the bread dough and called it a day. Still beats out fruit cake though; I think.
I enjoy bread pudding. I’ve never heard of meat in it. That reminds me when I went to boyfriend’s Thanksgiving and I saw mincemeat pie for the first time. I still have no idea what mincemeat is. Allrecipes has some nice quiche recipes. I think eggs, cheese and mushrooms were just meant to be together.
@Susan – Blaming the drier is good, one of my favorites.
@Marne – 18 eggs per week? That is amazing. I have stored the for a long time in the past. They keep well with refrigeration. But they don’t have that farm fresh taste after a while… at least with just leaving them in the carton in the refrigerator.
@Aaron – Maybe it was a meat pudding? It sounds icky.
